Carissa Hefta has been behind a bar for over 20 years — and not just pouring drinks. She managed Parliament Pub in Omaha for seven years as Lead Bartender and Manager: scheduling, inventory, ordering, staff training, and running a full operation under pressure night after night. Before that, she worked a specialty martini bar with a 100-cocktail menu she had memorized cold. She didn't read from a list. She knew it. She's bartended Gasparilla, College World Series events, and New Year's Eve countdowns — large crowds, outdoor rigs, high-ticket nights. At Molly Malone's she posted 114% per-shift sales growth within three months, built on repeat guests and tab volume, not luck. A USBG Bar Professional and certified mixologist, Carissa founded Heftology because she already knew how to run someone else's bar. Now she runs her own.
Michelle Flannery ran the prime bar at Circles Waterfront Restaurant for six years — not a satellite station, not a service bar. The main stage. Blenders, fresh squeezers, deep freezers, and one of Tampa Bay's most demanding cocktail menus, executed flawlessly under full service pressure night after night. She didn't just tend bar. We met Michelle on our initial meeting and she took notes on everything, answered all of our questions and she seemed prepared for everything. She knew exactly what the Mrs and wanted to drink. She knew we wanted to have fun, but not get too hammered and she helped us manage that. Friends wanted to buy us drinks and do shots together and she made sure to pour us the right drink at the right time. Sometimes they were alcohol free, she always made sure we had drinks in our hands that were fresh and water waiting for us if we came off the dance floor.
